This recipe requires a few hours of chill time, so factor that in when deciding when to use it. The quick prep time makes it an easy meal to prepare, but it won’t be ready in an hour. All ingredients are used raw for the greatest nutrient density and the strong flavour of the garlic does even out once chilled.
- 1 medium cucumber (chopped)
- 1 medium scallion (chopped)
- 1 clove garlic
- 4 cups tomato juice
- 1 medium green pepper (chopped)
- 1/2 tsp dill weed
- garnish sliced mushrooms or tomato chunks
- 1 cup soft tofu
- Combine all ingredients (except tofu), in small amounts, in blender and blend until smooth. Use salt sparingly if needed, and pepper. Whisk in tofu. Chill several hours before serving and garnish as desired with mushrooms or tomato
