I love making my own dressing since it’s quick, easy and can be stored in the fridge for multiple uses. Incorporate any of your favourite flavours and create a variety of types (spicy, sweet, sesame oil for an asian twist) making it a pleasure when serving up salads.
- 1/2 cup extra virgin olive oil (or 1/4 cup each flax and olive oils)
- 3 Tbsp apple cider vinegar
- 2-3 Tbsp water (until desired consistency)
- 1 tsp Dijon mustard (or ground mustard seeds)
- 1-3 cloves fresh garlic (use either chunks for flavor or crushed for a stronger taste)
- To taste Salt and pepper
- To taste Oregano
- To taste Basil
- To taste Parsley
- Put vinegar, water, and mustard in a jar that has a secure lid and shake well to thoroughly dissolve mustard. Then add oil and remaining ingredients and shake well again. Store in refrigerator and shake well before using. It will harden when refrigerated and will need 5-10 minutes at room temperature to re-liquify.
