Roasted Fish with Salsa

  • 4 tsp extra virgin olive oil
  • 4 8 oz. fish fillets (8 ounces each)
  • 1 Tbsp fresh lime juice
  • 1 Tbsp freshly chopped cilantro
  • to taste Salt and pepper
  • Salsa
  • 2 large tomatoes (diced)
  • 2 bunches scallions (chopped)
  • 1 Tbsp chopped cilantro
  • 1 clove crushed garlic
  • 1 Tbsp extra virgin olive oil
  • 2 tsp fresh lime juice
  1. Fish.

    Preheat oven to 400 degrees. Brush 1 tsp. olive oil on a baking sheet and place fish, skin side down. Combine remaining olive oil, lime juice, and cilantro and brush on each fillet. Sprinkle with salt and pepper to taste. Allow to sit for 15 minutes; then bake for 20 minutes or until just cooked. Serve immediately.

  2. Salsa. 

    Combine the following in a bowl. Garnish cooked fish with salsa and serve immediately.
