This dish adds new flavours to your side dishes. Chop or grate the cabbage and fennel for a more consistent flavour profile, trying to maintain the crunch of the cabbage upon cooking. The sweetness of the fennel is a welcome surprise once caramelized.
- 1 Tbsp . olive oil
- 2-3 cloves garlic (minced)
- ½ cup thinly sliced fresh fennel or 1 Tbsp. fennel seeds
- 4 Tbsp . minced shallots
- 4 cups shredded green cabbage
- 2 Tbsp . nutritional yeast
- In a heavy skillet or wok, stir-fry all ingredients except nutritional yeast. Continue for about 5 minutes until cabbage is still slightly crunchy. Sprinkle with nutritional yeast or sesame seeds and serve immediately.
