Split Pea Soup

  • 3 cups split peas (raw, well rinsed)
  • 8 cups chicken broth or water
  • 1 bay leaf (remove before serving)
  • 1 tsp mustard powder
  • 1 large onion (chopped)
  • 2 cloves garlic (minced)
  • 3 stalks celery (chopped)
  • 3 medium carrots (diced)
  • to taste Salt and pepper
  1. In a 6-quart pot, combine peas, desired liquid, and bay leaf. Bring to a boil, lower heat and simmer, partially cover for 20 minutes, stirring occasionally. Add remaining ingredients and continue to simmer for 40 additional minutes, stirring occasionally. Salt and pepper to taste.
